there is no way of saying this without alluding to something else…. i have been wanting to smoke something for a long time.
smoked flour, chocolate, fruits, sugar, all of these have gone through my head. i needed a dessert for a special tasting menu and it became time to make smoked ice cream. i had no idea what the rest of the dessert would be but i knew what at least one component would be. there was one simple rule – no adding smoke flavor via powder or flavorings.
this was one of those time where i was going more on instinct rather than brain power. i know very little about smoking food and did not have time to research the matter. all i was certain about was that there was a case of wood chips in the store room and the dessert was for that night. time to set up my smoker – a small stock pot with wood chips and a grate in the bottom, set on top of a burner.
i could cold smoke the base… or maybe smoke the milk powder… maybe smoked butter and use that as my fat……. no time to think just put the milk in the smoker and get on with it! less chit chat and more chop chop, time is wasting!!
the milk was smoked with a hot smoke and of course this broke the milk. even though it was broken i stirred the (now curds and whey) until the curds were all golden. this took at least one or two hours.
next i separated the two to see how each tasted. both had a pretty solid smoky flavor. i was unsure if using them separate was a good idea so i blended the a small amount of the whey back into the curds to make a paste. then i added the remaining whey and blended until it was as smooth as i could get it. the last step was to pass it and i was left with smoked milk.
once i had the smoked milk it was just a matter of making a neutral ice cream base with the smoked milk. in the end it had a pretty good flavor. all of my tasters really liked it. i was only using a small quenelle on each plate. if a bigger portion is needed you may want to replace some of the smoked milk with normal milk.
