it has been a very busy week. there was the launch of our donuts, a visit from the first lady, a new lunch menu in our market and some continued work on getting our viennoiserie perfect. now it is time to start on the menu for the fine dine. it is very exciting to be somewhere where i have the greenlight to do what i wish. at the same time i am not sure how far we can push it in vail. i think this first menu will revolve around items that people can easily identify with.
red velvet was the idea for this one. since i have returned to the states i have seen red velvet everywhere. guess i missed that point before it was overused. so what….
the idea was to keep the flavors simple and just go for the classic cake and ice cream. so… here it is, red velvet cake with cream cheese “sorbet.” the cake is layered and glazed with cream cheese frosting, then sprayed with… of course… a red velvet. the sorbet is covered with toated red velvet chips.
