any hotel pastry chef knows what it means to get a phone call or an email saying here is an event what is your menu. it does not matter what you are doing or where you are you have one minute to come up with the menu. if you are lucky you may have until the morning to come up with something. often you give these menus only to find yourself later asking “what was i thinking…” the thing that i like about these items is when you stumble across something that everyone really likes. this cookie was the result of one of those answer now create later situations. curry shortbread, coconut ganache and white chocolate. the shortbread was cubed then tossed in madras curry powder and granulated sugar. filled with toasted coconut ganche and sandwiched with a white chocolate plaque.
