the curse

i find myself writing another post about showpieces with mixed feelings. the idea that a nice showpiece = good chef is a misconception that i strongly disagree with and do want to contribute to. on the other hand i see an entire industry incestually copying the same design/concept all around the world in hotels and competitions everywhere. why do so many pastry chefs use the same curve and flower template? can we really not see shape, design and color outside of this format? i recently read a post the said showpiece work is not art it is a craft. i do believe that the industry has turned it into a craft, but only because we have failed to see the art in the craft. to say that showpiece work is not art is like saying sculpture is not art. enough ranting….

…. the curse. since i have come to abu dhabi i have not been able to finish one showpiece without destroying it in the process. part of me would like to believe it is because i am trying more difficult design and structure ideas… but that is probably just an excuse. one exercise that i have been interested in is a piece that is made from one shape. this project used squares and a visit to a piece i did a number of years ago. the goal of the exercise was to use only squares in different sizes. it was interesting to see how the whole look changed as the pieces were rearranged during the building process. what was even better was that the only thing i broke was the curse…

showpiece rules-

no flowers

there is no “front” to a three dimensional object

each piece will teach me something about color or design
