“new”

it has been a busy couple weeks. i have been assuming the role of exec pastry chef (our pastry chef has recently left) and been starting to put my touch in place. making leadership changes is always challenging so i have not been able to work on any new ideas but there have been some “new” items added to our buffet restaurant. those of you that know me will recognize a few of these and probably have a good laugh.

salted caramel ganache, cocoa crumble

chocolate custard, praline froth, aero

strawberry shortcake

vanilla risotto, kumquat, earl grey

liquid panna cotta, green tea, rhubarb
